Pizzelles3 eggs1/2 teaspoon anise see or extract 2 teaspoons baking powder 1 teaspoon pure vanilla extract 1 3/4 cups all-purpose flour 1/2 cup butter, melted and cooled 3/4 cup sugar
Beat eggs and sugar. Add butter, vanilla, and anise. Sift flour and baking powder and add to egg mixture. Batter will be stiff enough to be dropped by spoon. Spoon onto pizzelle iron and bake. Batter can be refrigerated to be used at a later time. Note:

And still makes them for us today.We all just loved them. Since I live out of town,I bought my own pizzelle iron last week and was looking for recipes when I found this one. And it's GREAT!!! Would make this again. I use this recipe every year but for those who Don't like anise you can substitute 1tsp.lemon extract and either 1 tsp.ground orange or lemon peel and also add candy sprinkles at the last minute to put rainbow colors into the cookies when baked. Would make this again. I love these cookies at Christmas time. I use this recipe with spiced rum and orange peel..... these are the BEST. e
